Ingredients
- 8 soft Medjool dates, stones removed
- 80 g Ausha's Cashews
- 40 g pistachios
- 2 tbsp tahini or smooth cashew butter
- 4 tsp Ausha Energy Plus Superfood Powder
- Finely grated zest of 1 lime
- 1–2 tsp lime juice
- ¼ tsp ground cardamom
- Tiny pinch of sea salt
- 2 tbsp finely chopped pistachios or desiccated coconut, for coating
Method
- Pulse the Ausha's cashews and pistachios in a food processor until they resemble coarse crumbs.
- Add the dates, tahini, lime zest, cardamom and salt. Pulse again until you have a sticky dough.
- Now add the Energy Plus powder and pulse only briefly, just enough to combine. If it feels dry, add 1 teaspoon of lime juice at a time.
- Roll into 8 small balls and coat with chopped pistachios or coconut.
- Refrigerate for around 30 minutes before serving.
- Keep refrigerated in an airtight container.
Why I'd make it this way
- The important trick is not cooking the Energy Plus. Heat-sensitive nutrients such as vitamin C can decline during cooking, with temperature, exposure time and oxidation all playing a part. A fridge recipe therefore avoids one of the main causes of nutrient loss.
No caffeine. No fluorescent can. No blender to wash.
