Moringa Green Glow Soup

Ingredients (2–3 servings)

  • 1 tbsp Ausha moringa powder
  • 1 tbsp olive oil or coconut oil
  • 1 small onion, chopped
  • 2 garlic cloves
  • 1 inch ginger
  • 1 small potato or 1/2 zucchini (for body)
  • 400 ml vegetable stock
  • 150 ml coconut milk
  • Salt to taste
  • Black pepper
  • Squeeze of lime
  • Optional Premium Add-ons
  • Toasted pumpkin seeds
  • Sautéed mushrooms
  • Chili oil swirl
  • Coriander leaves

Method.

  1. Build Base - Heat oil. Sauté onion, garlic, ginger for 3–4 mins.
  2. Add Body - Add diced potato or zucchini. Cook 2 mins.
  3. Simmer - Add stock. Simmer 12 mins until soft.
  4. Blend - Blend until smooth.
  5. Add Moringa Last - Whisk moringa powder with a little warm water first, then stir into soup off low heat. (Keeps color brighter.)
  6. Finish - Add coconut milk, salt, pepper, lime.
  7. ⁠Serve - Top with seeds or mushroom garnish.
