Moringa Green Glow Soup
Ingredients (2–3 servings)
- 1 tbsp Ausha moringa powder
- 1 tbsp olive oil or coconut oil
- 1 small onion, chopped
- 2 garlic cloves
- 1 inch ginger
- 1 small potato or 1/2 zucchini (for body)
- 400 ml vegetable stock
- 150 ml coconut milk
- Salt to taste
- Black pepper
- Squeeze of lime
- Optional Premium Add-ons
- Toasted pumpkin seeds
- Sautéed mushrooms
- Chili oil swirl
- Coriander leaves
Method.
- Build Base - Heat oil. Sauté onion, garlic, ginger for 3–4 mins.
- Add Body - Add diced potato or zucchini. Cook 2 mins.
- Simmer - Add stock. Simmer 12 mins until soft.
- Blend - Blend until smooth.
- Add Moringa Last - Whisk moringa powder with a little warm water first, then stir into soup off low heat. (Keeps color brighter.)
- Finish - Add coconut milk, salt, pepper, lime.
- Serve - Top with seeds or mushroom garnish.
