Smoky Cashew Cups
Ingredients
- 1 cup cashew nuts soaked 2–3 hrs
- 1 roasted red bell pepper
- 1 small onion, sautéed
- 1 garlic clove
- 1 tsp smoked paprika
- ½ tsp ground cumin
- ¼ tsp chili flakes
- Juice of ½ lime
- 2–3 tbsp coconut milk
- Salt to taste
Method:
- Soak cashew nuts in warm water for 2–3 hours. Drain and rinse.
- Blend cashews, roasted pepper, onion, garlic, spices, lime juice and coconut milk until smooth.
- Taste and adjust salt, spice and lime until thick and silky.
- Bake your chosen cups until crispy and golden.
- Fill cups with the curry. Top with cashews, pomegranate, herbs, sesame seeds and chili oil.
- Serve immediately for the best crunch and flavour.
