Smoky Cashew Cups

Ingredients

  • 1 cup cashew nuts soaked 2–3 hrs
  • 1 roasted red bell pepper
  • 1 small onion, sautéed
  • 1 garlic clove
  • 1 tsp smoked paprika
  • ½ tsp ground cumin
  • ¼ tsp chili flakes
  • Juice of ½ lime
  • 2–3 tbsp coconut milk
  • Salt to taste

Method: 

  • Soak cashew nuts in warm water for 2–3 hours. Drain and rinse.
  • Blend cashews, roasted pepper, onion, garlic, spices, lime juice and coconut milk until smooth.
  • Taste and adjust salt, spice and lime until thick and silky.
  • Bake your chosen cups until crispy and golden.
  • Fill cups with the curry. Top with cashews, pomegranate, herbs, sesame seeds and chili oil.
  • Serve immediately for the best crunch and flavour.
