Moringa Green Risotto
Ingredients (2–3 servings):
- 1 cup Arborio rice
- 1 tbsp Ausha Moringa Powder
- 1 small onion, finely chopped
- 2 garlic cloves, minced
- 1 tbsp olive oil
- 3 cups warm vegetable stock
- ½ cup coconut milk (or cream)
- ½ cup parmesan cheese (optional)
- 1 tbsp butter (optional)
- Salt & black pepper to taste
- Zest of 1 lemon
- Mushrooms / peas / asparagus (optional)
Method:
- Heat olive oil in a pan, sauté onion and garlic until soft and fragrant.
- Add Arborio rice and stir for 1–2 minutes until slightly glossy.
- Add warm stock gradually, one ladle at a time, stirring often until absorbed and the rice turns creamy and tender.
- Mix moringa powder with a little warm stock to form a smooth paste, then stir it into the risotto along with coconut milk.
- Finish with butter, parmesan, lemon zest, salt, and pepper. Top with sautéed veggies if using, and serve warm.
