Moringa Green Risotto

Ingredients (2–3 servings):

  • 1 cup Arborio rice
  • 1 tbsp Ausha Moringa Powder
  • 1 small onion, finely chopped
  • 2 garlic cloves, minced
  • 1 tbsp olive oil
  • 3 cups warm vegetable stock
  • ½ cup coconut milk (or cream)
  • ½ cup parmesan cheese (optional)
  • 1 tbsp butter (optional)
  • Salt & black pepper to taste
  • Zest of 1 lemon
  • Mushrooms / peas / asparagus (optional)

Method:

  1. Heat olive oil in a pan, sauté onion and garlic until soft and fragrant.
  2. Add Arborio rice and stir for 1–2 minutes until slightly glossy.
  3. Add warm stock gradually, one ladle at a time, stirring often until absorbed and the rice turns creamy and tender.
  4. Mix moringa powder with a little warm stock to form a smooth paste, then stir it into the risotto along with coconut milk.
  5. Finish with butter, parmesan, lemon zest, salt, and pepper. Top with sautéed veggies if using, and serve warm.
